Roasted Beet and Vine Tomato Salad

I just finished a 12 mile bike ride and was craving a nice big simple salad.  This baby was so delish I had to post the recipe.  If you think you don’t like beets, try them roasted.  They are so good…give beets a chance…

3 roasted beets, cooled and sliced (Just bake cleaned beets at 425 until done…usually about an hour.)

2 ripened-on-the-vine tomatoes, diced

1 head romaine leetuce

1 recipe Miso-Mustard with Chili and Lime Dressing

Add all ingredients to a bowl and dig in.

Miso-Mustard Dressing:

1 heaping Tbsp. Miso

2 Tbsp. fresh lime juice

1 squirt Dijon Mustard (about 1-2 tsp.)

1 packet stevia

1/2 tsp. chili powder

Mix all ingredients in a bowl, adjusting the amounts if necessary.
