Pizza Veggie Burgers and Seasoned Curly Fries

Some nights I like to take short cuts.  Tonight was one of those nights.  I let Morning Star take care of making the veggie burgers while I spiced them up to create a family favorite.  No burger night is complete without fries.  But my fries are healthy, baked without a bunch of unecessary fat.  And they are curly, so the kids think they are especially appealing.

For the Pizza Veggie Burgers…

4 Morning Star Tomato and Basil Pizza Burgers (found in freezer section)

4 toasted Whole wheat buns (we like Trader Joe’s brand, they are reasonable and I can pronounce all the ingredients)

2 Roma tomatoes

3/4 cup pizza sauce (look for a brand without added sugar and oil)

1 small can sliced olives

fresh basil leaves, a must! (about 1/2 cup unpacked)

Toast buns.  Heat veggie burgers on a skillet until completely heated through.  Layer with pizza sauce, olives, sliced tomatoes and fresh basil…in that order (it will keep the olives in place better.)

For the Seasoned Curly Fries…(which don’t have to be curly.)

4 Yukon potatoes, washed and scrubbed

Pam spray…optional

1/2 tsp. salt

1/2 tsp. chili powder

1-2 tsp. garlic powder

1 tsp. onion powder

Put potatoes through curly fry slicer.  If you don’t have one of these, just cut into pieces that are small and fry-shaped.  You can make these into ‘steak fries’ as well, it will just take longer to bake.

Place fries onto a silpat or lightly greased baking sheet.  Spray with Pam spray if using.  Sprinkle remaining seasonings onto fries and bake at 425 degrees for about 20-25 minutes or until cooked through and lightly crispy.  (The larger the fry size, the longer it will take to bake, so vary cooking times accordingly.)  You may have to add a bit more salt…so taste before serving.  Serve with Trader Joe’s ketchup if desired.

Serve with a nice big kale salad on the side and you are good to go.

See how easy short-cut nights are?  We are eating on the deck tonight too…less clean-up.  Heck, it’s been one of those days, I may even use paper plates.
