Zucchini Pasta with Protein Pesto and Tomatoes

This dish is perfect when a light and fresh dinner is desired.

~Serves about 2~

3 medium zucchini, ran through a spiral slicer to create “pasta” strands.

2 fresh tomatoes, diced

1 recipe Protein Packed Pesto (found in recipes section) (You won’t need the entire recipe, save some for another use.)

Fresh Basil leaves and Nutritional Yeast for garnish.

Plate zucchini pasta. Drizzle pesto on top.  Add diced tomatoes and garnish with fresh basil and Nutritional Yeast.
