Quinoa and Greens Bowl with Avocado and Tahini Lime Dressing

Um…yum.  I created this dish after cooking up a big batch of quinoa in my rice maker. The different flavors mingle really well together.

~Serves 4~

 3 cups cooked Quinoa (pronounced “Keenwah”)

1/2 cup chopped olives

2 tomatoes, diced

1/2 tsp. cumin

3/4 tsp sea salt

Juice of 1/2 one large lemon

1/3 cup fresh basil, julienned

4-8 cups favorite greens

1 large avocado, diced

Dressing:

2 Tbsp. tahini

Juice of 1/2 very large lemon or 1 lime (your choice)

1-2 tsp. Braggs Amino Acids or low sodium Soy Sauce

Water to thin

~Mix the first 7 ingredients.~

Place 1-2 cups favorite greens in each bowl.

Top with combined ingredients.

Lay avocado sliced on top.

Drizzle with dressing and serve!
