Colorful Curry

12 Fingerling Potatoes, boiled until done and quartered

2 cans organic diced tomatoes

1 cup beans

1 large package frozen chopped broccoli

2-3 Tbsp. curry powder

1 packet stevia (optional)

1/2 tsp. garlic powder

Dash of salt if desired

Additional cumin to taste

1 cup green grapes, cut into small pieces

Lightly steamed baby kale

Optional: Cooked Brown Rice

Cook potatoes.  Cut into quarters.  Add to a large pan.  Add tomatoes, beans, and broccoli.  Heat over medium heat for 10-12 minutes until heated through.  Add seasonings.  Adjust taste according to your preference.   Serve over steamed baby kale.  My kids like this dish served over kale AND rice.  Enjoy!
