Vegguccini Macadamia Alfredo

Oh my goodness.  I think I died and went to healthy heaven tonight.  I finished this meal feeling completely satisfied…my tastebuds are so happy right now.  I had to share this recipe right away…enjoy.

For the “pasta”…

1 carrot, thinly peeled

1 zucchini, thinly peeled…stop peeling when you hit seeds

1/2 yellow squash, thinly peeled, again stop when you hit seeds.

1/2 cup sprouts

1 red pepper, thinly sliced

1/2 avocado, cut into small pieces

1/4 cup macadamia nuts, roughly chopped

Mix carrots, zucchini, yellow squash and red pepper together.  Divide into two portions.  Place on 2 plates.  Top with sprouts.  Make incredibly sauce…

For the sauce…In a blender, blend very well…

1 scant cup macadamia nuts

1 cup water

1 1/2 Tbsp. fresh squeezed lemon juice

2 1/2 tsp. soy sauce or Brigg’s Amino Acids

1 clove garlic, finely minced

1/2 tsp. garlic powder

1 tsp. apple cider vinegar

2 1/2 Tbsp. Nutritional Yeast (you can find this in the bulk section of the natural/health food section)

pinch of cayenne pepper

sea salt to taste

After blending sauce ingredients very well, pour the sauce onto each prepared plate of veggie pasta mixture.   Garnish with avocado and macadamia nuts and serve.
