Chocolate (Bean) Pudding

Many puddings are made from ingredients that can hardly be pronounced as well as a ton of sugar.  (I hate food products that include ingredients that I have never heard of!) This pudding is decadent and rich and contains a lot of good-for-you fiber!

2 cups cooked Lima beans (I really like the lima beans in this recipes…it makes the pudding smooth.  Other beans can be used, but the consistency may be a little gritty.)

3/4 cup almond milk

1/3 cup cocoa powder

1/3 cup non-dairy chocolate chips

1/2 avocado, sliced

4-5 dates (or 1/3 cup unsweetened cane juice or 1/4 cup pure maple syrup)

4-5 Tbsp. natural peanut butter

1 1/2 tsp. pure vanilla extract

1/8 tsp. or less of almond extract

1/2 tsp. salt

Small pinch of cinnamon

Blend all ingredients in a blender.  Scrape the sides down and blend more….and more….you want this VERY smooth.  Add more almond milk if you would like a thinner consistency.  Chill for at least a few hours.  (My kids LOVE this recipe…but it has to be served completely chilled.)
